Ingredients

- 1.5 lb Chicken thighs, boneless

- 0.75 cup Greek yogurt

- 1 cup Cherry tomatoes
- 1 whole English cucumber
- 2 tbsp Fresh dill
- 4 cloves Garlic cloves
- 2 whole Lemon
- 4 cups Mixed greens
Pantry
- 0.25 cup Kalamata olives
- 3 tbsp Olive oil
Spices & Herbs
- 2 tsp Dried oregano
- 1 tsp Smoked paprika
Instructions
1. Cut chicken into 1.5-inch cubes. Combine with olive oil, lemon juice, garlic, oregano, paprika, salt, pepper.
2. Marinate at least 1 hour (overnight is better).
3. Thread onto skewers. Grill 12–14 min, turning, until cooked through and slightly charred.
4. Make quick tzatziki: Greek yogurt, grated cucumber, garlic, dill, lemon juice.
5. Serve over mixed greens, cucumber, tomato, olives, and red onion. Top with tzatziki.
