  • 2 whole eggs (room temp)

  • 1.5 cups mashed bananas (3 large)

  • 2 cups all-purpose flour
  • 0.5 tsp baking powder
  • 1 tsp baking soda
  • 0.25 cup brown sugar
  • 0.5 cup chopped nuts (optional)

  • 2 tsp vanilla
  • 0.25 cup vegetable oil

  • 0.5 tbsp cinnamon
  • 0.5 tsp salt

Instructions

1. Heat the oven to 325°F.
2. Grease a loaf pan, either 9x5x3 or 8½x4½x2½ inches, with shortening using a pastry brush.
3. Mix sugar, bananas, oil and eggs in a large bowl with a wooden spoon. Stir in remaining ingredients. Pour into pan.
4. Bake until a wooden pick inserted in center of the bread comes out clean, 60 to 70 minutes. Let cool 10 minutes, then loosen sides of loaf from pan. Remove from pan. Let cool completely before slicing. Makes 1 loaf.
**For muffins bake 25 min.
