Instructions
1. Preheat oven to 375°F.
2. Place all meatloaf ingredients (ground beef, salt, pepper, onion, egg, diced tomatoes with juice, Worcestershire sauce, and oats) into a large bowl or the bowl of a stand mixer.
3. Mix well by hand with a large spatula, or using a stand mixer on low with the paddle attachment for less than one minute.
4. Shape the mixture and place it in a loaf pan or baking dish.
5. In a small bowl, mix together the ketchup, brown sugar, and mustard for the topping.
6. Spread the topping evenly over the top of the meatloaf.
7. Bake for 55 minutes.
8. Remove from oven and let rest for 5–10 minutes before slicing.
