Chocolate Stuff

From the Sweet Potato Queens — a gloriously fudgy, barely-baked chocolate loaf with a crackly top and gooey center that demands a spoon.

Ingredients

Dairy & Eggs
  • 2 whole eggs
  • 0.5 cup salted butter
Pantry
  • 3 tbsp Hershey's cocoa powder
  • 0.5 cup all-purpose flour
  • 1 cup granulated sugar
  • 1 tsp vanilla extract

Instructions

1. Preheat oven to 300°F. Grease a loaf pan.
2. Beat the eggs with the sugar and flour in a mixing bowl until combined.
3. In the microwave, melt together the butter and cocoa powder, stirring until smooth.
4. Pour the butter-cocoa mixture into the egg mixture and stir really well until fully incorporated.
5. Add the vanilla and stir again.
6. Pour the batter into the greased loaf pan and set the pan in a larger pan filled with water (a bain-marie / water bath).
7. Bake at 300°F for 40–60 minutes. At 40 minutes, tap the top — if it's crunchy, it's done. The inside should remain dense, fudgy, and slightly under-baked. Grab a spoon and dig in.
