Produce
  • 1 whole cauliflower, cut into bite-sized florets
  • 1 whole medium onion, chopped fine
Pantry
  • 0.33 cup cider vinegar
  • 0.75 cup water
  • 0.25 tsp xanthan gum (or 1 tsp cornstarch)
Spices & Herbs
  • 0.5 tsp black pepper
  • 0.5 tsp celery salt
  • 1.5 tsp salt

3. Add onion to the pan and fry in bacon grease over medium heat until soft, about 5 minutes.
4. Add salt, celery salt, and pepper to the onions, stirring to combine.
5. Pour in water and cider vinegar, stirring constantly. Bring to a boil for 1 minute; whisk in xanthan gum and stir until the sauce thickens slightly.
6. Add crumbled bacon and cauliflower to the skillet; toss until well coated.
7. Allow to rest for at least 30 minutes and serve warm (not hot).
