Goan Fish Curry

Ingredients

Seafood
  • 1.5 lb Cod or halibut fillets
Produce
  • 2 tbsp Fresh cilantro
  • 1 inch Fresh ginger
  • 4 cloves Garlic cloves
  • 1 whole Onion
Pantry
  • 14 oz Coconut milk (full fat)
  • 2 tbsp Coconut oil
  • 1 tbsp Tamarind paste
Spices & Herbs
  • 1 tsp Ground coriander
  • 1 tsp Ground cumin
  • 0.5 tsp Ground turmeric
  • 1 tsp Kashmiri chili powder

Instructions

1. Heat coconut oil in a pan. Sauté onion until golden, 8 min. Add garlic and ginger.
2. Add turmeric, cumin, coriander, and chili; cook 1 min. Add tamarind paste and stir well.
3. Pour in coconut milk; simmer 5 min. Season with salt and a pinch of sugar.
4. Add fish in a single layer. Simmer gently 8–10 min until fish is just cooked through.
5. Garnish with fresh cilantro and serve with cauliflower rice.
