Spanakopita-Stuffed Chicken

Ingredients

- 2 whole Chicken breasts, large
Dairy & Eggs
- 4 oz Feta cheese
Produce
- 2 tbsp Fresh dill
- 5 oz Frozen spinach, thawed
- 2 cloves Garlic cloves
Pantry
- 2 tbsp Olive oil
Spices & Herbs
- 1 tsp Smoked paprika
Instructions
1. Preheat oven to 375°F. Squeeze spinach very dry. Mix with feta, garlic, dill, salt, and pepper.
2. Cut a deep horizontal pocket in each chicken breast without cutting all the way through.
3. Stuff each breast with half the spinach mixture. Secure with toothpicks.
4. Season outside with salt, pepper, and smoked paprika. Sear in ovenproof skillet 3 min per side.
5. Transfer to oven and bake 18–20 min until internal temp reaches 165°F.
6. Remove toothpicks, rest 5 min, slice and serve.
